 White Chinese Celery General Information Chinese White Celery (Apium graveolens) is call qin cai or shui qin. In China, it grows on the mountainsides in temperate and tropical climates, as a marsh plant, often referred to as wetland celery. It is thin, less fibrous, crispy and has three-lobed leaves. It kinda looks like a western celery on a diet. It does not need to have its strings removed but the smell and taste is stronger than most other celery. The leaves can be lightly cooked alone or with the stems along with ginger roots. Its leaves and stems are also used in soups and stews.  Leaves, stems and seeds are appreciated for it’s vitamin A, C along with it’s general healing effect. In 500 BCE, Confucius wrote about celery saying it is soothing and an aid to digestion. White Chinese Celery Growing Expectancies In the Costa Rican climate, where EAT is based, we experienced excellent stalks with no diseases when we grew it hanging in a Flying Nun. It was grown in a 20lt hydro-organic container during the heavy rainy season. It was transplanted from a self watering seedling pot along with a few lettuce plants, both for culinary and esthetic results. You can see this in the slideshow above. Strawberry Seeds General Information There can be more than 200 strawberry seeds on the outside of a strawberry. Strawberrys are referred to as a “berry,” but they are not a true berry like blueberries and others. Their seeds are not true “seeds” either.” The red strawberry flesh is actually accessory tissue, while the tiny tan flecks are actually fruits in and of themselves. These tiny tan fruits contain the seeds. The seed-containing fruits are called “achenes” Or can also be referred to as an akene, achenocarp, or an achenium. Germinating Strawberry Seeds All wild and alpine varieties should be placed in the freezer for 3 weeks so as to “cold stratify” them, simulating the winter. This will improve the percentage of germination. Traditional Strawberries:  The germination type substrate (17% compost) should be approximately 2cm deep and pre-moistened to 30%. Sprinkle the seeds over the damp seed substrate and add a light dusting of pure peat moss over the planted surface. Strawberry seeds germinate faster with some light hitting them. The germination time averages 21-30 days. Once the strawberry plants have sprouted, do not transplant into a container until the 3rd true leaves appear. Training and Sucker Pruning a Tomato Plant

Pruning Determinant and Undetermined Tomato Plants Tomatoes are either determinate or indeterminate. This will depend on the tomato plant’s growth habit of stopping at a determined height vs a plant that keeps on growing indeterminately. Tomato plant suckers, or side shoots, are the growth that appears in the crotch between the stem and a branch. If it is an indeterminate and left to grow, the suckers will become another main stem with branches, flowers, fruit and will generate more suckers of their own. This will be a problem if the pattern continues indeterminately. Determinant tomato plants have a predetermined growth cycle. When they reach a certain height they cease growing. If you are growing a determinate, pruning is of little importance. You might consider removing a few lower branches once it has grown a bit to assist in air circulation under the plant. The Bonsai Dwarf Red Cherry Tomato , for example, is a determinant type. It’s perfect for a smaller container such as the 5lt Hydro-Organic passive container. The  Bonsai Cherry Tomato doesn’t fruit until the branches are pretty much fully grown and then they set their fruit all at once. So pruning is not required. You will need to harvest all the tomatoes within a very short time of one another. Indeterminate tomato plants you will want to have under growth control. If you leave all the suckers to grow, your plants will become heavy besides crowding out other plants. It’s incredible this vegetable plants eagerness to grow and live. The indeterminate growth pattern is exponential. From the main stem a suckers will keep forming in the crotch of all the leaves. These will grow into a vines shooting off suckers as well. At that rate you could get over crowded in a very short time. Removing some suckers will result in a more compact plant and larger tomatoes. Training and Pruning an Indeterminate Tomato Plant Your going to want to understand that an indeterminate tomato plant needs first to have something placed for support, trained then pruned constantly. To train the plant to stay within your support, you will have to “top-it-off” by cutting the “top” of the main stem. Afterwards, during it’s growth it will require constant pruning of the emerging suckers. Pruning suckers has a lot to do with the thickness of the stems and quality of the tomatoes. Training an Indeterminate Tomato Plant The plant will need to be trained to only grow in the space you have assigned to it. Tomato plants will ramble on and on given the chance. Controlling this large growth by topping off the plant after one or two suckers form is necessary. Perhaps the only exception is when you are placing the container where the plant can grow onto the arms of a Flying Nun Vivero or next to a trellis in the patio. But even then at some point your going to have to control the growth. The first thing you want to do is set up a trellis, cage or bamboo branch for the vine to grow into. Bamboo branches are ideal for this purpose. They have a main stem with lots of random branches radiating outwards. Place the bamboo branch into the container while the plant is very young. Then, in the upcoming days, train it stay inside that space while maximizing light and air exposure. You do that in two ways, topping it off and trimming the sucker shoots. Determinate Verses Indeterminate Tomato Plants

Difference Between Determinant & Indeterminate Tomato Plants To be, or not to be a determinate or indeterminate tomato plant, is not part of a gardeners decision making once the seeds are in hand. These traits are inherent in the tomato plants genetic imprint within the seed. With either an indeterminate or determinate, tomato plant, 5 to 10 leaf fronds emerge out of the primary shoot of a young tomato vine before a flower cluster emerges. That means there will be at least 4 to 9 inter-nodes before a flower cluster appears on the vine. At that point the two types part company, so to speak. The indeterminate will keep growing in an exponential manner while the determinate will stop growing, get fatter stems and start focus on it’s fruits. If a tomato reaches a certain size and stops growing, it is called a determinant tomato plant. However if the suckers keep on growing and growing out of the pot and into the frying pan, it is called indeterminate. The determinants stop growing and producing. The indeterminate’s keep on keeping on… forever, it seams. An indeterminate tomato plant will need to be pruned while a determinant will not. Indeterminate Tomato Plants Although indeterminate tomato plants look like they have a single main stem, this is not the case, all side shoots are replicates of the first stem. The growth of the first emerging stem ends with the formation of the first flower. Upward growth continues because the last leaf initiated before the flower cluster, produces a side shoot. These should be viewed as more main stems. The side shoot produces 3 more leaves before it produces another flower cluster. This process of initiating new growth from a side shoot of the last leaf (initiated before the flower cluster) continues indefinitely. This gives the appearance of another main stem with a flower cluster in the inter node between every three leaf nodes. Most heritage types are indeterminate varieties. You can tell if a tomato plant is determinate or indeterminate by looking at how the flower cluster comes off the stem. If it is centered and shooting out from the tip of the stem, then it is a determinate plant. If the flower cluster is off to one side with the stem growing past the cluster, then it has an indeterminate growth pattern. Determinant Tomato Plants With a determinate tomato plant type, the process differs in that the side shoot above the first flower cluster produces 0 to 2 leaf nodes and a flower cluster but no further shoots. This ends the upward growth of the plant, making the main stem much shorter. Many side shoots will be sent from the first primary shoot. This gives the plant a bushy appearance. Each secondary side shoot eventually terminates in a flower cluster as did the primary shoot. Most determinate tomato plants need no support or pruning. The simultaneous growth of many flower clusters on determinate vines promotes earliness and concentrates fruit maturity compared to an indeterminate. Most modern commercial canners are determinate. It is the only way a commercial operation can function in a controlled growth environment. It is less work and fiddling in the garden or patio. But why would you want to store them and why dry? Because you have a bumper crop and need them for spices and medicinal remedies that are inherent in capsaicim. Freezing is fine but the defrosting at times is a problem. Besides, dry pepper is a very convenient way to use peppers. They can then be made into powder for cooking or capsules and wraps for cures. They don’t require valuable real estate in your refrigerator nor freezer. Removing moisture from peppers will magnify and intensify the heat from the capsaisim and enhance flavors and natural sugars it contains. Dehydrated peppers pack a bigger bite in both solid food and hot sauce recipes than fresh peppers. Did I convince you to dry them? You were already going to dry them?… Ok, then lets proceed… with caution. Warning About Drying Peppers Please read this!! Even before you learn How to Dry Peppers, you should know how strong peppers particles can get. The capsiacin is a very strong chemical. The hotter the pepper the more capsaicin it will contain. If your not familiar with the Scoville Unites review, perhaps you should catch up on it. It is a way to rate the hotness of peppers, the capsiacin it contains. Take precautions when preparing fresh peppers and when drying the fruits. Wear protective gloves, goggles and a dust mask when grinding pepper pods after the drying process and during the grinding work. I cant stress that enough. If possible do this work outdoors. Be sure not to scratch your eyes, nose, face, or “anything else” after handling. Scrub your hands really well afterwards with soap and water. Take extra precaution around young children and cuddly pets. . Different Ways on How to Dry Peppers How to Dry Peppers… what a joke. It is almost impossible to NOT dry a pepper pod. Let me count the ways to dry peppers and you can mix and match the methods, turn them around and upside down. It can’t not work. So feel free to be free and read the following, “Ways to Dry Peppers.” Hang Dry the Entire Pepper Plant     The simplest method to dry peppers.  The success of an outside or garage hang-drying is going to depend on your regional climate. If it is convenient and you are ready to take the whole plant up, simply cut her off at ground level and hang the entire plant in the garage. It will take months for the plant to dry. In the mean time the peppers normally stay fresh and colorful for longer than they would in the refrigerator. You can use them to make stuffed peppers for quite a while before they get too dry for that recipe. The humidity in your garage or area, cant be extremely high. But it’s is a good method for you to try. There is almost no work involved. Hang Dry Only Pepper Pods     The most popular method to dry peppers. As if anybody cared. What people remember about this pepper is when they were 8 years old and it was the first time they realized what-was-what. It is approximately 3 to 4 inches in length, (bigger than my husbands) and 1 to 1.5 inches wide when fully aroused. When fully grown the Peter’s Naughty Penis Pepper Plant can grow up to 50 – 70 cm high. They are infamous cousins of the Tabasco pepper and the jalapeno. However, Peter Peppers are hotter than the Tabasco and 10 times hotter than the jalapeno, weighing in at 35,000-55,000 Scoville Heat Units. Big Jim Hot Pepper Description Introduced in 1975 by New Mexico State University (NMSU), home of the Chile Pepper Institute and pepper pro Dr. Nakayama. He classified his fruit as Capsicum frutescens longum. It was created from crosses between a Peruvian chile and various large New Mexico Universities  private collection of sweeties. This Big Guy is listed in the Guinness Book of Records as the world’s largest pepper. It produces 8″ to 12″ long by 2 ¾” wide, thick, smooth, fleshy fruits. They have high yields of bright green (maturing to deep red), mildly hot fruit. Pungency is variable from plant to plant.  The young green peppers are so mild that they can be used as a green sweet peppers for cooking. It has a Scoville heat unit rating of 500 to 2,500. That is quite a spread I know. Fabian Garcia If your into peppers joining the Chile Pepper Institute created in honor of Fabian Garcia, the father of New Mexico’s pepper industry, if not the father of modern peppers period. NMSU has honored Mexicanborn Don Garcia by naming the 45-acre research center after him. In 1907, Garcia began the chile-breeding work that would lead to the creation of New Mexico’s first standardized variety of the New Mexico chile pepper. People couldn’t depend on the stability, in shape, taste and hotness of the varieties starting to appear on the scene. He set out to creating a pod that growers and consumers could depend on. Garcia made possible mass cultivation of genetically stable chile peppers. This opened the door to the chile-processing and -canning industry. Today, more than 40,000 acres of New Mexico chiles are under cultivation in California, Arizona and Texas. Growing Big Jim Hot Pepper Big Gim likes to grow and is surprisingly small in comparison to the large fruit. The bush can growing between 24″ to 36″ high, with up to 30 pods on a single plant. When fruits have reached full-size they are light green to red. The dark red fruits are fully ripened. It will take approximately 80 days after transplanting seedlings in to containers for the fruit to be mature. Be sure to use a pruning shears or knife to harvest the peppers. If you try pulling them off you cpuld stress the branch. I had a full branch looking at me loose in my hand once. It said “why do you hate me so”. lol  So be patient and loving even with this Big Guy Jim. Us Big Guys need love too. Using & Cooking Big Jim Hot Pepper  It is popular because of the very long, tasty, 10- to 12-inch pods. An obvious choice for chiles rellenos. It’s very mild even though it is classified as a Hot Pepper, so it can be used as a sweet one as well if you want a bit more flavor in your dish. The dwarf, compact plants of Mini Bell Mix Sweet Peppers produce a nearly seedless heavy set of small 1 ¼” long by 1 ¼”, blocky shaped bells. Pinch out the growing points at 6″ so the plants get bush. They will grow to only 18″ set fruit in different colors, tangerine, red, orange and chocolate. They are early to flower and set fruit constantly. They’re productive and decorative when grown in containers on a sunny patio. They keep well and maintain their crunch. Growing Mini Bell Mix Sweet Peppers  Plant the seeds in a mini auto cup and wait for a couple of weeks to see the tops of their heads. A week or so later, when seedlings are 4 -6″ tall, switch two of them over to a medium 15lt passive or flowing hydro-organic, or 4 to a larger Fincita container. Pinching out the growing points at 6″ will produce plants that are bushy and only 18″ tall. So if you go for the med Hydro-organic container… do it! They require full sun and really don’t mind getting a bit of rain on them. Using Mini Bells Mini Bell Mix Sweet Peppers are real sweeties.
